Weeknight Fiesta Fete

What I love about summer is that you can easily dress up a weeknight dinner by grilling. Grilled fish tacos are light, pop with flavor and color and are probably the one of the easiest and fun dishes you can whip up on a warm summer night.





Ancho Chile-Lime Salmon Tacos

Grilled Salmon

Salmon
Lime Juice
Ancho Chile Seasoning
Smoked Paprika
Salt & Pepper

1. Marinate in seasonings and lime juice then grill.

Tacos & Toppings

Grilled Salmon
Whole Wheat Flour Tortillas
Black Beans, rinsed and drained
Shaved red onion
Mixed Cheese
Cilantro
Sour Cream
Smashed Avocado with lemon

1. Melt cheese on tortilla and add desired toppings






Classic Margarita

1 1/2 ounces Silver Tequila
3/4 ounce Triple Sec
1 1/2 Tablespoons Fresh Lime Juice
Ice
Lime Wedges
1. Shake, strain, and serve
